Ok Moms, let’s get serious here.

Being a stay at home mom is amazing! We get to see our children grow up, go to all of their games and practices and get hugs and snuggles in the middle of the day!! 
We are sooo lucky, right??? 
Lol, it’s not that simple!! 
Don’t get me wrong, I wouldn’t change being an at home mom for anything, BUT…..

We clean bums and noses all day

Wipe up spill after spill 

We’re always stepping in something sticky, finding food in places where there just shouldn’t be food and yelling things like “get your mouth off the toilet!”

For once, I would love to go to the bathroom alone. Or shower, alone. Or do anything alone, actually. 
I know we are blessed. But, being so blessed comes with some not so great benefits. 
We are around food all day long! The food our kids like and can somehow eat 2 bites of and leave the rest. Of course we can’t let it go to waist, so we eat it. A handful of fish crackers here, the crust from the pb&j there. Oh, you didn’t want that half of your grilled cheese? No worries, mom will eat it. 


Now, don’t get me started on finding time to exercise!! What?? Get up at 4:30 am to run on the treadmill in my gloomy basement?? Um, no thanks. I’m sorry, I just can’t! Am I alone here?? 
My alarm clock is my 3 year old and by the time I’m done putting all 3 kids to bed, the only exercise I want is the bicep curl of a glass of wine coming up to my lips! 
“But you’re a Health & Fitness Coach!” I know, I know. But I’m a mom and a wife first. I struggled with all of that above for years and years. I’ve never been “thin” I’ve struggled with those 10-20 lbs my whole life, until I was invited to a “CHALLENGE GROUP”! 
A simple little challenge group changed the course of my life. No joke.

I made this graphic for my coaching opportunity page on Facebook. After I posted it, I kept reading it over and over and am really in love with it! 

This is what my Health & Fitness Business embodies! It’s my passion and I absolutely love watching people work toward and reach goals they didn’t think they could!

I don’t “sell” stuff. I offer FREE support to anyone who wants to get healthy. That’s it. If it ends up with them doing one of the Beachbody programs or drinking Shakeology because they actually see the benefits, that’s icing on the cake. 

Beachbody, as a company, has the goal to “End the trend of obeisety!” I see this progression every day. In my free challenge groups, I hear about people who have stopped having to take medication for high blood pressure, diabetes, crones disease, Lymes disease, playing more with their kids, jogging a mile for the first time and generally feeling happier about their life. 

What more could I ask for out of a career??!!

Allergic to avocado!!

As I was stuffing my face with a new recipe, tuna mixed with avocado, I was googling, “why does my throat itch when I eat avocado?”  Answer: your allergic, stop eating at once and call your dr. Hmm, so I of course finished my lunch, and took some Benadryl! Lol. From what little research I have done thus far, if you have a latex allergy (which I do) avocado, banana and kiwi have a genetic makeup that mimics the allergen in latex. Great! So for the time being I guess I’m avoiding these foods. Or take a lot of naps from the Benadryl! 

Anyone else have more info on this phenomenon? 

 

Spinach, tomato and cheese fritata

This is such a yummy easy breakfast/lunch to make! I have always been afraid of the word “fritata”. Sounds so complicated and fancy. It’s not! Here’s how I make this yummy dish…..

1 tbls olive oil 

1 cup sliced cherry tomatoes 

6 eggs

1/4 cup milk

2 cups spinach

1 cup shredded cheddar cheese

Salt and pepper to taste

Preheat oven to 400. Saute tomatoes and spinach in olive oil 5-6 minutes, till tender



spray baking dish with non stick spray and spread sauted veggies on bottom



Whisk together eggs, milk, salt and pepper

Pour egg mixture over veggies and top with shredded cheese. 



Bake for 20-25 min. 

Great hot or room temp and you can add anything you like to the mIx. 



Portuguese Soup

My oldest daughter, 15 yrs old, woke up with a fever of 104.9 today! I was a little scared, but after a doctor visit that showed no flu or strep we were told to monitor fever and give ibuprofen. Sooooo now my poor baby tells me she would really like some “Portuguese soup” like her best friends mother makes. Huh?? I have no idea what this is or what is in it. So I Pinterest it and find a recipe that she says looks good. I changed it up a little and it was delicious! Plus she ate it for lunch and dinner! Bonus!

So here goes…..

Ingredients
2 tablespoons extra-virgin olive oil
3 medium red bliss potatoes peeled and diced
1 large onion chopped
4 cloves garlic, chopped
2 bay leaves, fresh or dried
8 cups kale, coarsely chopped
Coarse salt and pepper
1 (15-ounce) can garbanzos ( chick peas), drained and rinsed
1 (15-ounce) can small red kidney beans, drained and rinsed
1 small can tomato paste
1 pound diced chourico, casing removed
1 quart chicken stock
1 quart vegetable stock
Warm, crusty bread

Directions
Heat oil in a deep pot over medium high heat. Add potatoes and onions, cover and cook 5 minutes, stirring occasionally.

Add garlic, bay leaves, and kale to the pot. Cover pot and wilt greens 2 minutes. Season with salt and pepper. Add beans, tomato paste, chourico, and broth to the pot and bring soup to a full boil. Reduce heat back to medium and cook 5 to 10 minutes longer or until potatoes are tender.

Serve soup with hunks of crusty bread and butter and of course a big glass of red wine!!

It came out so yummy, I will be adding it to my list of go to winter soups.

Why did I wait so long to make hummus?? I have no idea! But I finally made some today and it’s fantastic!
1 can garbanzo beans/chick peas
1/3 olive oil
1 minced clove garlic
11/2 tbls lemon juice
Kosher salt to taste

Add all ingredients to food processor and blend!

Blend until desired consistency, add oil as needed. Put in airtight container and refrigerate for at least 3 hours and then enjoy. I read you can freeze it so I did freeze one container to see how that works. For $1.50 it’s a bargain!

So I have been doing Weight Watchers since Sept. It has been working well but getting boring. I have started working out with a friend and now we both are trying out this Fitbit. It’s worn either as a bracelet or a clip on and tracks walking, stairs, activity and even your sleep patterns. It also has an online food log to keep me honest.

I think I have linked my Fitbit to log here daily so everyone if you can also keep me honest! I’ll let you known how it goes!

Saving asparagus

Easy way to make asparagus last longer and stay fresher. Cut about 1 inch off bottoms and place in a container with a little water, about 2 inches. Place in fridge and they will last a few days longer than usual. Easy peasy!
