Egg white omelette with spinach and cheese, yum! Only 2 points on Weight Watchers! Pair with a hot cup of green tea and you have an amazingly healthy and satisfying breakfast, or lunch, or dinner for that matter!

I have my own weird way of making omelets because I am paranoid of salmonella. ( if you read my blog, your not surprised) I use 2 eggs separated. I toss the yolks, but if you are a baker you may want to freeze them for a recipe later. Add salt and pepper to taste and 1 tbl of skin milk. Spray a small oven proof frying pan with cooking spray and heat on med/ high. Preheat broiler. Whisk egg whites till frothy and add to hot pan. Using spatula crape around edge of pan and trough eggs almost like your scrambling them. Once they start to firm, take them off the heat and place pan under broiler for no more than 1 minute. Remove pan, WITH potholder!( I have burned myself pretty bad before, stupidly grabbing the handle) add torn up spinach and 1/2 slice of whatever cheese you like, I use swiss. Place pan back under broiler for another min or less, till cheese melts. Use a clean spatula to work all around the omelette and under to loosen it from the pan. Flip it over itself, in half and then slide it onto your plate.

Now that I am writing these directions out it sounds so much more time consuming than it really is. It’s quick and easy, trust me! Try it!

Healthy Turkey Meatloaf

Made this for dinner last night and it was delicious! I got this from the menu service I have, which gives Weight Watchers points. This has only 5 points per serving! Yum. I have posted the recipe below, it also has a side dish that was great as well, even my super picky 9 year old ate the zucchini!

I am used to cooking, I’m no gourmet chef but I like to know what my family is eating so I cook full diners at least 5-6 times a week. I signed up for a “meal planning” program last month but just started it tonight. It gives me weekly menus and directions as well as the grocery list. I have chosen the meal plan with Weight Watcher points since that is what I have decided to try to loose a few lbs. I swear, taking the weekly meal planning off my shoulders was an instant stress relief! My plan is to try each meal as given to me and then makes notes about what we thought as a family. My 9 yr old is the pickiest eater and I have even told her that she must try everything I make. She actually tried fish tonight! She hated it, but she tried it and that’s huge! Tonight’s dish was Athenian tilapia with lemony potatoes. It was pretty good and only took 30 min from start to finish.

I didnt think to take any pics but I will try to document the dinners in the future in case anyone wants the recipes.

Oh, and the WW points for the fish and potatoes was only 8 total! And I was full after!

Its time for bed now, but I will blog tomorrow about my Weight Watchers and exercise challenge. I’m even going to reveal my weight!! Lol, good night!
